Yes! Thats what we did, met up with a group on the train and they let us tag along. So glad we did as we were going to use the motorway, but they introduced us to a different and far more enjoyable way to do Le Mans...I doff my cap to Team Gulp!! 
I did a very brief iPhone video, and far from being the best bit of the route (and not as good as yours!), but worth a share anyway.

Way down, off at Blagny-sur-Bresle then down the back roads (especially the D149), lunch at Honfleur, then cross country to Alencon. Great roads.
On the way back we did peage but detoured off to visit the D-Day beaches. Well worth the extra hour detour and, on the whole trip I think we saw one traffic police.

Four hours down the Peage or a full day exploring villages, stopping for coffee and beer where you fancy and a nice leisurely lunch. Hmm, let me think 
Next time I would quite like to head into the countryside to the East of Rouen rather than the West. I understand Lyons la Forêt is a lovely lunch stop. anyone know if there is a particular restaurant that we should visit?

We did a D road route from the chunnel to the east of Rouen - stopping at les Andelys on the Seine for lunch. Chateau Gaillard - the castle of Richard the Lionheart - overlooks the Seine and is well worth a visit. Just a bit further east is Monets garden at Giverny also worth visiting.
Lyons La Forêt is quite picturesque it reminded me of a Tyrolean Village in Northern France!.... I visited for an afternoon/evening last year as a family member had photos on display at an exhibtion.
Not sure you are going to get a Michelin star experience, but the pretty town square had half a dozen local style restaurants - we ate reasonably well in the one organised for our group of 18.... would have been happy to try 3 or 4 of the others.

Motorway to Rouen, off piste from there. Gives you a chance to put some miles behind you but then hoon it through some amazing countryside on fantastic roads usually without seeing anynBiB.
Word of warning though, make sure you slow down when you come into a town/village and observe the speed limit
