How early should I book my ferry crossing?

Realistically, how early do ferries need to be booked to avoid having to pay stupid prices to get there?
My problem is twofold, firstly It's quite likely I'll have a new car by the time I go and with all the companies I've used before I've had to give a reg plate at the time of booking and charged to change this at a later date if I need to.
Secondly, I currently have a Mini (which is very small) and the replacement is likely to be a bigger car (MX5, Focus ST, Alfa Brera?!?!), some of the companies ask you what kind of car you have when you book, if I book as a Mini and then change to a Brera is there a chance they'll say that they can't change it because the new car is longer than the old one?!

That's what I thought, I'm probably being paranoid but the last thing I want is for them to decide I can't go on the crossing I planned because I want to go in a car 2 foot longer than my old one!
Norfolk line are really good actually, I used them once this summer and other than the French terminal being in the middle of a barren industrial wasteland it was pretty good really

That's one thing I'd forgotten after a few years using SpeedFerries, Boulogne is not designed to easily get out of while getting used to driving on the right. They've always had roadworks too I've spotted, great for making noise to impress the workmen though

When I booked with P&O last year, my car went onto a private plate after the booking and they hardly seemed interested and didn't charge me a penny, just turned up at the ferry port with my new V5 just in case.
Our convoy is currently trying to sort next years plans but I think we're just going for the usual P&O Dover/Calais. No hassles ever over the cars taken, number of passengers, arriving early/late. So convenient that it makes sense just to book up now.
