Another map will overwrite the bad map ... but is it a bad map, or damage from pushing OEM beyond what it's capable of ... I'd be wary if I was you

It could just be a faulty N75 valve which the ecu uses to control boost. Get it plugged into VAGCOM or use a obd port reader app

From experience (autoelectrician here), it's very difficult to put the map back to standard. However, the car is unlikely to go into limp simply due to a poor map. Be prepared for a decent diagnostic session if you decide to go ahead, and ultimately you may need an ECU if the map does need to be put back to standard.
