I'm looking at buying a performance car between 2005-2008, think Clio 182, Type R, GTI...

Now most of the taxes on these are quite high. Around the £300 mark. They also have a fair few previous keepers due to age.

I'm not too fussed paying the tax, as it's part of owning a performance car, but the general car buyer would be more hesitant. Also the more former keepers the slightly more off putting in most cases.

I'd be looking to upgrade after a year or so, and am worrying that it'll take forever to sell the car. Am I overthinking it?

You want to buy it - there will be another "you" next year when you want to sell it. That's usually my philosophy. Just bear in mind that there won't be as many people interested as there would be if it was, say, a Qashqai or a Focus.
