Buy a car in The Netherlands & drive back?

Does anybody know where you stand on buying a car in Europe (specifically the Netherlands or Italy) and driving it back to the UK?

I know you have to notify the relevant authorities etc within 14 days but I'm presuming that if you insure it you can drive it back? Can't find an answer so was hoping someone on here has done it in the past!
