What do you class as light? If you're talking modern family saloon then none are light, also your crashy ride will be fine for someone else.
I'd say either an Insignia VXR or Mazda6 & maybe if you can find one a 320i luxury
VXR is a bit of a bargain.

Octavia meets all the criteria except your definition of light (but only just)Reasonably light, great handling with non 'crashy' suspension

Some models have Apple Car Play, if not, they all have Bluetooth streaming and a whole hose of other modern tech on some models like active lights, high beam assist, that sort of stuff.
Great handling is subjective, the VRS handles very well for what it is, it's got the VAG XDS 'diff' so it corners like it shouldn't...
You'd be spoilt for choice at £15k too.
Audi A3 Saloon 1.4 TFSI.
Reasonably light, decent handling (as good as you'd want on the road), manual, entertainment crap, saloon. AND under budget.

The Octavia's not "great handling" but it can pick up its skirt and go around corners well if you ask it to. It's not the same setup as a Golf GTI but it's close, and it manages its extra bulk surprisingly well.
I suspect you might find that the problem is not your budget but what features you're willing to sacrifice: 2010 cars won't have your preferred tech so if you want that, you'll have to buy newer. A 63 plate Octavia will have something you can Bluetooth with, but you'll sacrifice a bit of bulk/finesse at handling.
If you sacrifice some of your tech demands or consider aftermarket solutions, you will probably find a better handling solution than the Octavia. If you can't, I suspect you will struggle to find a better option. A hot hatch might provide options if you're not dead set on a saloon or an estate.
