2 years - really, nowt you can do really after this time. Better checks next time would be my advice.

Depends on the age/value of the car, if it's an old heap then being an ex write off probably won't make any difference. If it's a minter late model car then approach the original dealer and ask for the difference in value between a Cat D car with higher mileage and a lower mileage non Cat car. If no joy go to your local Trading Standards and see if they will help. I believe the dealer has a duty of care to advise customers that a car is a write off as there's a significant different value to both versions.
You're going to have to declare the CAT marker when you sell it so you might have issues then.

Are dealers licensed in the UK? If they are, put in a complaint. It might not help you but every one logged against that dealer will help put him out of business.

I have to say this is on you you should have done your checks, so the only thing to do is cut your losses or keep it, if it's running well & in good condition then I'd say keep it, run it until it drops then the loss will be nothing.

I bought a CAT D beemer from a dealer and found out a year after buying it. Quick call to explain and let it be know that ignoring it was not an option, he bought it back for a couple of hundred less than I paid, which I was seriously happy with as I was mighty pissed to find it was CAT D.

Call dealer , remind him it's illegal to sell with declaring, ask what he's going to do about it before you make his life a misery.
