Options and changing spec on a new car

I already suspect the answer is going to be a no but for a new car can you make many changes to the spec?.
For example on a new Mx5 to get the 2.0 engine you need to take lane departure warning, cruise control, stop start etc but with a 1.5 you can get a basic spec but only with the smaller engine. Ideally I'd want the 2.0 engine but with the least amount of gadgets possible.
Having seen the Mazda factory and how the cars are made to order I'd have thought it'd be fairly easy to configure the car to what you want but there's only 3 specs available here.

And I presume S/S is required on the 2.0 to get a decent CO2 rating on it.

For cars like the Mazda, you can only pick from the specs listed in the brochure. One way around this would be trying to find a right hand drive car from another country which might be closer to what you want - as the specs offered often vary per country with each country deciding how to split the range and features to their market. But cost of buying, exporting, transport and import would make this a very expensive way to get what you want. WLTP, and the requirement to test every combination of features, means more and more options are disappearing, with everything bundled into fewer and fewer models to reduce the number and cost of tests needed. So expect to see more of this.

You can usually turn off all that stuff anyway. The cars are made to order, but production costs will go up if you have lots of spec changes.
