Which low cost car for road trip ?

So here is the idea, buy a cheap, spacious, reliable and economical car for a road trip across Europe ?
Ideally a car that is fairly popular that I can sell easily for roughly what I bought it for. Obviously a lot depends on how much I pay relative to the market but i can worry about that separately. What is more important is that there is a decent demand to make it easier to sell.
The conundrum here is that a diesel would tick the economical box but may be a challenge to sell once back in the U.K. due to the lack of perceived love for diesels these days. This maybe offset by the fuel savings Given maybe a 4k mile trip ?
I don’t want to spend too much to minimise outlay. Maybe up to £3k.
A car that jumps to mind is maybe a Mercedes E class estate diesel from around 2006 ?
I would imagine they would be quite reliable and also, parts and mechanical knowledge widespread across Europe.
Thoughts ? Alternatives ?
