Since dealers opened up after lockdown this seems to be a common sight. I can go to the Sytner website and see exactly how much every car is, but if I then wander on to a forecourt, the cars are there but the price boards are all blank. Any ideas why?

Not something I’ve seen myself, but I presume it’s likely so they can change pricing on cars quickly without having to think about updating the prices in cars on the forecourt.

it's to get you to actually talk to someone.

Fair enough. Does very much seem to be a post lockdown thing. It also doesn’t really fit in with the idea that most dealers want you to make appointments. If you’ve done this, you’ve almost certainly looked online to see the price of the car(s) you’re interested in.
