Issues with new Golf 8

I picked up a new Golf back in July.
For the last 2 weeks the central touch screen has been stuck on 'Loading settings...' making it useless (no radio, sat nav, car play, settings etc). I've found a lot of the safety features such as front assist, speed sign recognition and parking sensors have also been a little glitchy (sometimes popping up as an error on the dash).
After a couple of visits to the dealership and them attempting to perform a software update (which took all day) they have concluded it will need a new radio system. This is currently on back order, leaving the car in its current state for potentially weeks. If the part was in stock and it could be repaired in the next couple of days I wouldn't have been as fussed.
Do you think there are grounds to demand a new vehicle to replace the current faulty one instead of waiting for repair or am I just being fussy?

It's possible that the rejection process will take longer than getting it fixed. Can you ask the Dealer for a loan car while you wait?
You could mention rejection as a last resort, but I don't imagine that they will rush to help you with that. Good luck.

Thinking about it, a loan vehicle would solve everything without the hassle of a rejection. No doubt they'll be a pain about sorting even that...
