Thoughts on buying via private sale remotely

Good afternoon all,
I'm after some thoughts and advice. I am considering buying a car almost 500 miles away. It is not a common car I could buy just anywhere and this example appears to be just what I'm after.
The car has been inspected over a WhatsApp video call on a ramp in a classic car garage where it happened to be on Friday for a minor piece of work. I've been in contact with the private owner and selling, but it was the garage owner who showed me round the car. I'm happy the car is genuine etc.
It would need to be transported to me due to lockdown etc. I have recommendations for 2 companies with a good reputation.
My question is around how others would approach such a transaction e.g. how and when were funds transferred, how and when was the V5 sections signed and new keeper supplement transferred and the like?
I've bought plenty cars including private sales but have always been there personally in the past.

I sold my 350Z just before Christmas to a guy in Northern Ireland.
He arranged an AA inspection of the car at my house.
He transferred the money to my bank account.
He arranged through Shipley a trucker to come and collect the car from my house. I tucked the completed V5 new keeper supplement into the service history folder and left that in the glovebox for him.
As soon as the truck had left, I went online and put the transfer of ownership through on the DVLA website. That was pretty much it, as far as I recall.
The buyer certainly took a bit of risk, but having had an independent third-party verify the car's existence, location and condition, knowing my address and having talked to me briefly on the phone, I guess he felt comfortable enough to do so. The upside for him was a low mileage car in good condition for a reasonable 'mid market' price.
