Here are my picks for you

Saab 9-3 2.8 T Aero Sportwagon - 250 bhp stock, remappable to at least 285 bhp
https://www.autotrader.co.uk/car-details/202109117...

Vauxhall Insignia 2.0i Turbo SRi Estate - 220 bhp stock, 270 bhp remapped
https://www.autotrader.co.uk/car-details/202108065...

Mercedes E500 Estate - normally aspirated motors don't normally remap so well, but when you have 5 litres and 300 bhp to play with you'll be able to extract 330 bhp remapped
https://www.autotrader.co.uk/car-details/202109067...

Subaru Legacy 3.0 R Spec B - 245 bhp stock, again normally aspirated, so expect about 265 bhp remapped

240PS Mondeo Titanium X Sport

Good amount of bork potential but 535d

ideally 2010 or newer
as much as possible - or something that can be good mapped (over 300 maybe)

seems the 535d / VRS are the pick of the bunch at the moment

A 6grand 535d will cost a fortune to run

Especially compared to a 6 grand VRS

Mondeo 2.5t or V70 T5 surely are two 5pot mile munchers that should fit your requirements.

Octo VRS is a hard one to beat for running costs/quality/performance etc...

E350cgi 290bhp Elegance

https://www.autotrader.co.uk/car-details/202108025...

Insignia 2.0T 220 will map to around 280bhp

https://www.autotrader.co.uk/car-details/202108065...

2.2d 508 GT 200bhp a remap will see it in the 250-260bhp but you'll have an extra 100-120lbft

https://www.autotrader.co.uk/car-details/202105202...

V60 D5 215 as above a remap will see you with a lot of torque & a decent amount of BHP:

https://www.autotrader.co.uk/car-details/202109227...

2.0T A4

https://www.autotrader.co.uk/car-details/202109107...

V70 T6 280

for the most car for the money, I'd suggest a Vauxhall.

That E500 linked below looks lovely. The ad hints it is a well cared for car too. I'd be having that if I was in your shoes. Especially over a Saab or Ford.

I was in a similar situation a few months ago, I wanted comfort, reliability, nippy, and reasonable economy. I ended up buying a Lexus RX400H. Apart from the CVT gearbox it is pretty damn nice (and anonymous). 100k on the clock and will probably do another 100k before anything falls off. Not normally a fan of SUVs but as a family/dog wagon its perfect.

Same as any other private purchase. Cat N though and if so inclined you'd need a (dodgy) friendly MOT station to ignore the missing emissions stuff.
