Ideas here ..he’ll be fine in the C30,me and son are both 6ft 3” and have bags of room.

I’m 6’4 and find it pretty random what cars are awkward and which ones are fine. Nissan Juke was a complete no no but the Fiesta was perfectly fine. I also find automatic cars much easier s as it’s the my left knee/leg hitting the steering wheel that’s often the issue fitting in a car.
I think having size 15 feet will be more of an issue than height.
French cars seem to have much less space for feet on the pedals. I only have size 10, but struggle with catching the edge of the brake pedal while depressing the clutch, or the under-dash soundproofing with my toes unless I wear "slim" trainers.
Even worse in my Abarth 595 - I kept hitting the accelerator while braking.
Never had this problem with Fords, Vauxhalls, or VWs (mostly German designs with better RHD conversions?) or Japanese cars (designed as RHD).
Going for an automatic would be one solution.

6' 4" and size 12s here - I drove a mk1 Aygo very happily for a long time, so worth a look at those (and C1/107, of course).
But it's really a case of going and sitting in cars. He should be able to tell quite quickly if foot space will be a problem; head room can vary by options even on the "same" car - eg, a sliding sunroof can steal an inch or two; height adjustable seats sometimes seem to be higher than non-adjustable, even at their lowest, due to the mechanism.
I'm currently in a Skoda Rapid - the pano roof gives more headroom (and a feeling of space), and there's actually room both sides of the pedals for me to rest my feet if I want when I'm on cruise control.
Climbing shoes might pull his massive plates of meat in enough to help in marginal cases!

Some cars will depend on whether he is long legged or long bodied. I'm 6'6" and ive had a Skoda Citigo (VW Up/Seat Mini would be the same) and Smart Fortwo (maybe not so good for the bike, but you can get racks for them that go on the back) and I've sat in Minis. All have been fine. I don't get on with Fiats (new EV 500 or old petrol 500, Panda).
