Hybrid or cheap EV and Interesting ICE car up to 35k?

My super cheap PCP Honda ENY1 goes back in the next 8 weeks so I need to start thinking about a replacement. I have enjoyed the simplicity of commuting in an EV and preheating it on a cold morning! My new commute is only 5 mile round trip a day (yes I cycle in the summer) and I already have some other pretty cool toys (1951 Split bug with big motor and a 2003 F250 6.0 Powerstroke truck) and over the last 5 years previously owned a 2003 996 C2 manual (sold to buy an air-cooled 911) and 2010 E63 6.3 (not sure why I sold it!)
My two trains of thought are:
1) Buy a cheap daily EV like a used Mokka SRI or wait for the new Panda EV on 0% and then spend up to £25kish on something interesting for the better weather and longer drives:

2008 White Vauxhall VXR8 for sale for £16,000 in LIVERSEDGE, WEST YORKSHIRE
2016 Beige BMW M4 for sale for £20,750 in LEATHERHEAD, SURREY (cool colour)
2015 Silver Mercedes-Benz E Class for sale for £24,995 in Wirral, Merseyside
1999 Silver Porsche 911 for sale for £18,995 in Bingley, West Yorkshire (sweet early 996 with neph interior)
2003 Grey Porsche 911 for sale for £23,995 in DONCASTER, SOUTH YORKSHIRE (great colour)
2004 Silver Porsche 911 for sale for £24,996 in ROCHESTER, KENT
Or
2) Spend £25-35k on a Hybrid to do it all. The list of potentials is a much much shorter…

Although on paper the first option seems like a great idea the risk is the interesting car won’t get used much and become an expensive ornament. I previously bought a twin-air 4x4 Panda to keep the miles and weather off a Focus 2.5 RS and before I knew it the Focus barely moved from month to month because the Panda was fun and in front of the garage.

For me, the things I care about in a fun car and the things I care about in a daily driver are too different and in some cases contradictory for a one car solution to be really satisfying. Automatic/manual, effortless/involving, quiet/vocal, capacious/compact, luxurious/lightweight, etc.

I guess the risk of a second car is it could easily become the fourth car... the bug and F250 are very cool and this country isn't exactly known for it's reliability of good weather!
The i8 roadster is stunning but a bit too much budget creep.
Do they sound ok or is it a bit too synthetic?

Oh I disagree, my practical car is an F82 M4 Coupe DCT because I used to commute on the M4 one or two times a week (The DCT that is, not because of the common name) . Proper 4 seater and a good boot.

My 2nd is a Z4M. 2006 and I drive it more than the M4 (It always gets chosen if it's dry and I don't need the space, however cold). It's also easier to park in tight spaces.
Keeping them both despite the lack of commute anymore. I'm lucky I appreciate that.
