I'm looking at purchasing a Noble M12 GTO 2.5 in the near future, but sadly I don't know too much about them.

Is there anything I need to watch out for?

Common problems

What’s the servicing cost & how often?

But most importantly; can they be used as a daily driver?

Well - first time buyers normally go for houses !

try to make sure your car has a track day sump and a lsd (Limited Slip Diff)
