It's not entirely clear, but they appear to be talking about an aero device which diverts air to cool the brakes. On the car in the video, they've installed aluminium plates for brake cooling for track use, but they create a small compromise between air to the brakes and to the engine.

The first bit is about the black plastic aero devices in front of each tires which have been fitted to avoid negative turbulences around the wheels/the wheel arches. The device is however also blocking the airflow to the front brakes….he suggests for track work you could therefore remove them, thus reducing brake temperatures (at the expense of compromising the aero).
The second bit is about the aluminium plates which appear to have been modified to allow for more airflow to the brakes. It is indeed not completely clear whether that is a standard part or a modified one.

Thank you. It was the first bit I was particularly interested in as I removed mine to aid brake cooling and I was hoping that that wasn't considered to be a bad idea!
