Understanding trailer weight plates

We're looking to start doing track days again, and this time have something more focused to tow to the track rather than arrive and drive.
We're struggling to understand the plates on the trailers, and google doesn't seem to be helping, so can someone help explain the meaning of the weights on something like this... (not one we're considering just for an example)
We know our car's tow capacity, we know the weight of the car we'll be towing (plus fuel, any equipment etc) but unsure of the weight of the trailer etc (appreciate there are other weight considerations for the whole car/trailer combo)
