owner says its been running on a Jaguar log book for years... wonder what would happen if it was checked by police or subject to an insurance claim...hmmm

It really depends when the conversion was carried out. In the mid 80s registration of kits was a bit hit and miss and there were quite a lot of cars retaining their donor vehicle details. It was used to avoid a "Q" plate.
The whole registration process was revised to remove these anomolies but I don't think it was retrospective.
Even now people are bending the rules to get cars though IVA and then modify them later. For example, no windscreen on a "Caterfield removes the requirement for wipers and demisting.

if the log book still states its a jaguar xj12 or xj6 then its obviously not correct?
As far as I am aware even back then you could only keep the donor reg if you used a certain number of parts from the original vehicle and even then the log book would have been changed from being a "jaguar" to something more appropriate ?
