I've always found Motorsport Events and Easytrack to be good organisers. With regards to insurance check with your company, some insurers (like HIC I think) offer trackday insurance as part of their normal package, but check exactly what it covers you for (may be 3rd party only).
Before you go its just worth checking the car over throughly, fluids, lights, make sure nothing is loose and might come off with higher cornering/braking speeds.
On the day make sure you have a full tank of fuel or take some in jerry cans, some circuits sell fuel but it tends to be expensive. Take some food and drink and suitable clothing (eg in an open car you would normally have to wear a long sleved top). Take it easy when you start and let the tyres warm up etc, its worth stopping after a few laps and making sure everything is it should be.
And make sure you have fun!

What I did was go around my car (westfield) and check all the fluids, bleed the brakes, ensure I had enough tyre tread depth and brake pad material and so on. I also replaced all the hose jubilee clips as many were rusty. I took with me spare pads, loads of spare nuts and bolts and clips and stuff, spare wheels, a jack, and gawd knows what such that it utterly filled the westy up.
My mate, on the other hand, thought briefly about making himself some sandwiches but eventually didn't bother and bought a hot dog.
We were both fine but I spent a lot of time unpacking and then repacking the car.
If you do a load of prep then you should be fine but if you're a worrier take loads of spares. You'll never fit them as inevitably if something does go wrong you won't have the right bit but it'll make you feel better.
The best thing you can take is a rope so someone can tow you to the nearest public road and an aa/rac card.
