Haven't done it myself, but don't think it would be actually difficult as long as you can get a suitable size (and modified if that's what the kit required) LHD rack.
After that it's just work, how much dismantling and redoing is required is going to depend not only on the model of kit, but on the way in which the individual car was built and, of course which engine is fitted (exhaust manifold might be a problem, and for the average motorcycle engine, no chance!)

We are the new owners of the Cat E1 (Southways Automotive, Steve_D & Myself) I don't think it would be a very easy task. There is a lot of bracketry for the pedal box & steering column that would need moving/replacing. The brakes would need to be re-plumbed along with all the wiring behind the dash.
It is all possible to be done but not easy. Have you thought about maybe selling the RHD car when the time comes and building a LHD to export? NB: The footwell is narrower on the passenger side!!

The Tiger Cat uses the steering rack from a Cortina. Owners find it impossible to find a quick rack so I doubt you will find a LHD rack. Your best bet would be to find a car that uses the mk2 Escort rack as these are available.
We are looking at offering a quick rack. Steve is talking to the suppliers about minimum order qty's etc.Paul.B
