I'm after a few ideas for a trip to Italy in a couple of months.
Idealy like to take the QP for a factory tour at Modena but other than that I'm open to suggestions.
We will have a 14 month old with myself and the wife and plan to do a couple of days stop in maybe 3-4 places to break it up.

I am doing this route on Thursday in my Esprit, after threatening something similar on my wife for ages, she said 'well just bloody do it!' oooookay..., 'but take your daughter' (she's 11) Should be fun
Thought about Modena but don't really have the Italian connection. Having said that, if it turns out I am making good time I can always bend in...
I used 'Tyre' to plot it, quite a good little program that would be even better if my Tomtom had an itinerary button

Excellent route, but noticed that you're bypassing the bottom part of the Route Napoleon? Is that intentional due to time constraints, or maybe you've done it to death?
If you haven't done it and have the time, it's worth detouring north from Cannes through Grasse up to Castellane on the N85, and then cutting west through the Gorge du Verdon and Lac de Sainte-Croix and back onto the autoroute for Aix and your original route. Some stunning roads and scenery that would be a shame to miss!

Never driven this area so any advice on good routes is welcome so thanks, I have 2 week's to complete it so I can adjust it as I go. I am camping and HotelF1-ing all the way with my 11 year old daughter would you believe, all in a Lotus Esprit !! A bit brave, maybe but have dreamed it for ages...

You'll have a ball, as it is a fantastic route! I've done most of it over the course of 4-5 roadtrips, and you're covering some fantastic roads and areas of beauty.
You're right to keep it as flexible as possible though. The excursion up RN to the Gorge du Verdon is worth doing, but only if you have 1/2 a day or so to enjoy it so depending on your timings and inclination when you get to Cannes you may want to continue your original route.
One other idea I'd suggest is that as you're doubling up on the Calais-Dijon legs it would be tempting to cut across from Reims to Metz on your way down and onto Baden-Baden just across the German border, where you can then drop down through the Black Forest (on the B500) into Switzerland that way - although again I'm guessing your intention is to get down to/back from Dijon as quickly as possible so will depend on your timings.
ETA, just realised you're leaving for your trip today so it's a bit late for the above, but Bon Voyages!

To the OP... we've done Italy a couple of times in the 911, breaking it up to have some relaxation, golf and for the OH to do some shopping, have some nice meals etc. We loved both Milan and Turin where we spend 4 to 5 days in each of them (on two separate trips) in the middle of each trip, which were excellent cities to spend time in.
As for the driving, we went via Alsace, Interlaken, Furka, Grimsel and St Gottard passes before heading into Milan (3 easy days driving, with plenty of stops and an afternoon of golf)!

Just did Stelvio today, very tight twisty 1st gear stuff but the views are awesome.
Went from Lake Como, (the drive along the western edge was pretty epic, started at a small campsite in Dongo!) ended up at Silvaplana just past St Moritz. Gorgeous valleys but it rained a bit.
Going to Montreux tomorrow to say Hi to Freddie!
