If you want a proper weekend car, how about a Caterham or similar? I did a PalmerSport day the other week and they were a lot of fun for what they were.

If you want something to do track-days in I would stay away from Scoobys and Evos, the running costs would be frightening.

Get something light like an Elise, or budget dependant look at a Caterham or similar.
