So which would it be given the choice?? My thinking is that the gt2 gives u all the gt3 does and more power and is currently cheaper.

It would depend also on some of the custom options too like paint to sample and interior trim choices. The GT2 while rare may look like just another powerful turbo charged car of the era while the GT3 is the last of the gas guzzling, loud, linear accel, purist cars. Albeit, I could be wrong. But it looks like the GT3's are waaaaay over priced so on that level the GT2 makes more sense. I'd want a GT2 with PTS if available and an understated interior. Otherwise, lots of other older P-cars that seem more attractive to me.
I'm not sure if driving a turbo in rain or snow is as pleasant as the 4.0. If I had either - I'm not sure if I would drive them in the rain or snow. But the same might apply to the occasional track day.
And yes after awhile power just doesn't mean much. Especially in a 2 wheel drive car.

Interesting answer Molly. What does the gt3 offer over the gt2 then for you?
In all honesty, I havent driven either and would love to be able to afford any of them! But generally, I prefer NA engines for their throttle reponse and more linear power delivery. Dont get me a wrong, I love Turbos too, but given the choice its NA for me.

It would be the 4.0 litre for me. I've run a 997 GT2 (non RS) for 15,000 miles now and I absolutely love it - the punch of the engine is addictive and I never tire of it. But, and it is a large "but", you (I!) can't drive it with the finesse of the NA cars. The 4.0 (or any GT3 for that matter) is just so delicately adjustable on the throttle in a way that the GT2 can't match. I love cornering more than I do monstering the straights (and the 4.0 is damn near as quick anyway), hence my choice.
