I would think one of the main limiting factors is the number of available gearboxes and associated bits (unless you're thinking of a non-original).
+1 on talking to Paul Anderson (928spares.co.uk) if you can get hold of him as he does have the experience and might even have the parts.
Also not sure why it would be easier than other cars, you still have to change the firewall/pedal box to install the clutch etc.

I'd herard either correctly or incorrectly that the apertures in the firewall are already there for both LHD, RHD & manual & auto (I assume with grommets in place for any unused openings).
I'd have thought that a Corvette six-speeder would be stronger box than the original which can experience considerable wear to the second gear synchromesh even on a car in a standard state of tune.
