Here's a Koenigsegg test driver in a Mazda MX-5 NC that had a remap, exhaust, coilovers + arbs, brake pads/fluid, tyres and not much else.

This is making me laugh.I don't think It's about the car, or the driver's knowledge of the track.
Talent, experience and balls of steel look the more likely factors to me! Sadly I have none of these.
I'm happy to recognise them in others though.
Nothing surprising there, Good driver in well set up car on grippy tyres with great knowledge of the track, catches “Faster” car with average driver with probably not much knowledge of the track.
Put the Mazda driver in the Porsche on similar tyres and it would disappear off into the distance.
To be fair though, it is a lot easier for a reasonable driver to wring the neck of a lightish well set up lowly-ish powered front engine RWD car than a heavier powerful arse engined one, throw in lack of track knowledge and the difference will exaggerate more
