Have had the offer of some 996 5 spoke Carrera wheels. Have checked them out and they are the same tyre size as my current ones but the front tyres are 1/2 inch wider, with the same offset, and the rears are 1 inch wider with a different offset. I have seen quite a few Boxsters with the same wheels so I am assuming that they will fir ok.

My question is, will they effect the handling and will the tyre pressures be the same?

Not sure if this is correct but have been told that I will need 20mm spacers and extended wheel bolts to fit them. Is that correct?

If the tyres are the same size the pressures will be the same too. If larger, you will need to adjust accordingly. The wheels will fit ok but the rears will require a spacer to compensate for the different offset together with longer wheel bolts.
