I presume you've seen Full Leather trim in a Box/996 before from the cars you've owned previously.
I've seen the "soft touch" plastic used by Porsche and, personally, I wouldn't consider re-trimming. It will be expensive and the dissassembly/assembly process will ensure that the damn thing rattles for ever after. Having said this the back of Porsche Post is full of ads from people who will do this for you - generally, though, they are doing work on cars ten years older than yours that actually require the original leather replacing as its worn out.
