Funny enough I did a session yesterday in a Boxster GTS and as usual it was a lot of fun.
Yes you can take a guest and if you want share the experience with them. You get about 2 hours in total in the car on various tracks and your instructor will try and tailor the experience to what you want to get out of it so its worth doing some research before you go.

The experience lasts half a day and you can choose a morning or afternoon session. I've only ever done morning sessions as you get breakfast and lunch included and the eggs Benedict is to die for after a long drive in rush hour traffic.

Good question about the car - I've only ever driven two seaters there so I don't know.
As for watching from afar, the facilities are great for food and drinks and there's a large viewing area on the first floor of the building. My wife has been more than happy supping coffee, watching what's going on and ready/working/chatting on the phone while I've been out for sessions. So I guess it depends who you're planning on taking!
The other alternative is to book an experience session for the other person to do at the same time.

No, only you and the instructor are allowed in the car whilst out on track. The spectator can relax and watch you from the resturant area which is quite comfortable and if the weather's nice from the roof terrace from which you also get a good view of the race circuit which is great if there's some decent cars using it. My wife and I have shared our experiences in the past and both have thoroughly enjoyed the whole event, even when waiting for your turn on track. I don’t want to take someone if they just get to watch from afar

This is correct, I did a session last year and the instructor was in another car following me and giving instructions over a walkie talkie. They have now reverted back to having the instructor in the car with you but with you both wearing masks and I had the window ajar just to let a bit more fresh air in.
