My fav is La Turbi coming out of Monaco. Being uphill, you can hold the engine on a good loading to really hear.
The motorway from Nice to Genoa also gets my vote of one of the worlds greatest stretches of tarmac.
My all time greatest road is the ribbon of black stuff that goes from Campins to Col de Revell, north east of Barcelona, in Montsenny National Park. No tunnels, but the sound reverberates off the mountain walls as you climb from near sea level to 2400m. All 2nd and 3rd gear stuff, with the occasional 150mph plus straight. The views are breathtaking and the word 'Awesome' was invented to describe this road.
There's also a great restuarant in Campins, that is frequently host to the squad of Barcelona football team, after training sessions. BBQ'd lamb shanks to die for.
If driving down that way, the tunnel under Andorra on the N152 is also notable.

Not *quite* as glamourous as the above...but tunnels between Dover & Folkestone....much like the Rouen tunnels, round/tubular, so sounds better than the A1(M)/Ghonneria tunnel....
A couple of mates were round this evening, co-incidentally were reminiscing about the time when the 3 of us drove to Le Mans in our Westfields...all holding it in 2nd, from 2k to 8.5k ish....lift off..."BANG" and a 2ft flame out the side!..
....classic....dont think we were too popular with our French cousins, however...
