Do it! But then I would say that, as I own a 968 too...

I realise that was a slightly unhelpful post. Bear in mind that your GTV will probably have niceties like aircon and electric windows, and the 968 CS won't. The CS will be a noticeably quicker car, even if you have a 3.2 GTV. They're really different beasts, though. The 968 CS could still be used as a daily drive, but it will be particularly joyful on a track.

I've never owned or even driven a 968 so I can't comment in any real detail, but I did used to own a GTV 3.0 24v. It looked cool. It had a great engine note. It had red leather seats. However, it never felt that "grown up". Like a hot hatch in fancy clothes. But from everything I've heard, the 968 CS is a real future classic and unlike the Alfa, it's (proper sports car) rear wheel drive. Drive one. THEN DO IT!!!

A properly maintained and sensibly modded CS will do well under 6 seconds, has a very flat torque curve, is virtually 50/50 balanced so handles a dream, and hits 160+. In fact, I was watching a video only yesterday of a bloke doing around 175 in one on an autobahn. Maybe the engine note isn't particularly meaty - it is a 3L 4-pot. But, really, it is a proper sports car and a trackday favourite.

Not really comparable cars, both are great but very different to drive. The 68 is more focused and more rewarding to drive. The engine in the Alfa is fantastic and the car is a good road car. On the track the Porsche will be far better. Now if you could put the Alfa V6 in the 968.............

968 CS is money in the bank. Maintain it well and you will never lose on it. I can see them appreciating or at least holding value for the forseeable future.

Have a look at 951s as well. They are a lot cheaper than the 968CS, and should you get the hankering for a bit more power, easily tuneable. I don't see them depreciating either.
