cold weather oil temps

I've read numerous threads on what revs to use at what temps so am well resourced on that subject - what I would like to know is how you folks judge engine temperature on cold days when it's difficult to get the oil up to temperature. I find that oil temp actually drops on cold days when blatting along a motorway or A-road. I presume (to be corrected) that after 15 mins or so of driving the engine and gearbox etc are sufficiently up to temp to allow some high end revs? ps. always driven off from cold - never left to idle.

I live just of an 'A' dual carriage-way and can travel straiht from firing up for approx. 15 miles before she's above 60. If i do come to a standstill sooner say 8-10 miles she heats up to 60 pretty quick. Travelling deffinitely keeps her cooler for longer in this weather.

Thats strange, I have found that mine warms up fairly quickly even in very cold weather. Longer than in the summer for sure but still gets to 50 in a few miles. Now got me worrying in case my sensor is dodgy....

My MK2 also gets to 50 Deg.C within a couple of miles much quicker than my previous MK1 Tuscan, possibly the temp sensor is in a different place/less affected by the airflow to the MK1.
I think you're right about the wind affecting the sensor - my guess is the oil is a lot hotter that it reads - my water temp does not drop in the same way and yes, stick it in slow moving traffic and up it goes. Perhaps they got right with the MkII? Because of this I tend to allow 15 mins or so of A road driving at around 60 mph (which is about 2.5k revs) before opening it up. The previous owner, a race engineer with Jaguar, gave me his views of rpm and oil temp and basically, he never pushed it about 3,000 revs until oil temp over 70 degrees.
