Oil levels confusions

Still new to the Tuscan i went to check the oil level after only 270 miles after i topped it up(before the 270 miles) when i thought i needed to.Today the same procedure engine hot then just turn off.So far so good when i saw that the level was on min
i top it up with Mobils finest 5/40 and check after starting the engine again,then put a little more in and presto up to level.
Now checked once the engine has cooled down a bit and the level is near max
so started engine,ran a while,turned off and then level just over half way.
Whats going on? any ideas
