First time I drove to Italy a couple of years ago and start stopping for hours getting into Switzerland then stuck on Autostrada in 40degree heat and the water temperature never went over 93' with the first fan coming on as necessary and not bothering the second fan ever, oil maximum was 90'.
Back home fan very rarely needed even when stuck in traffic.
Now finding though the temps coming up quicker (a good thing) but then continuing to rise if stuck in slow moving traffic or in town to the point where first fan will come on but struggle to control the temperature with oil now matching the water temp which it didn't before being about 5' lower.
When moving again temp goes back down to what I've come to regard as normal ie.75-80' water 65-75' oil.
Just had a 6000mile service but nothing showing up as abnormal. This is making me think twice about travelling down to the land of pasta this year so was wondering if there were any thoughts on this to make me feel better, a suggestion on another forum was that it could be the cats breaking down( no jokes please)!

Sorry if this sounds basic but have you checked coolant level recently? Mine developed a slight leak and would do exactly as yours is when low.

Might need the cooling system bled, my Griff was doing the same thing and it turned out to have a very minor coolant leak from the heater valve, this was causing air to be sucked in when it cooled down and slowly built up causing it to overheat. Once the valve was replaced and system bled properly I didn't have a problem again.

Coolant system was checked over at Sebring during the service, a very small (teacup size) was added, but wasn't drained down. Now thinking of putting in some water wetter incase of any airlocks, is it any good?

Water wetter won't clear air locks, might be worth asking how the Speed ^ is bled and have a go, the Griffith was simply a case of running the engine up to temperture with the cap off until the air comes out, allow to cool down again and then top up. Not sure if the same works for the Speed 6 though.
