Water Temperature

Quick question. How hot should I expect the water temperature to get? Stuck in the traffic here in Tokyo on a very hot day today and I was getting very concerned about the water temperature, which when stationary was creeping over 100c. How can I check to see if the fans are cutting in, I am not sure if they are. If they are not what should I check? Bloody typical it should happen today as I have my first ever track day on Monday - would be just my luck to have to cancel it due to a problem
The fans should cut in at 92 & 96 Deg.C, they are actually controlled by a different sensor to the one that drives the display.The ECU sensor is at the rear of the engine and controls the fans and the one at the front of the engine gives the signal to the display they can be accessed by removal of the airbox:-

The display sensor can often read about 5 Deg.C higher than the ECU sensor. To test the fans disconnect the ECU sensor and switch the ignition on and both fans should run, if not could be the fuses/relays.
