Oil temp gauge calibration/reset?

My car had a new oil temp sensor before i bought it as it was bring the fault code up on the pod, however it now reads very low all the time, can it be adjusted on the pod or reset?.
The other day the car had been stood the best part of a week, turned ignition on, (didnt start it), ambiant air was 7 degress, water was 6 and the oil was -12, it only ever gets as high as 45 degrees even in stop start traffic or on a good thrash.
Logic says it should be similar to the water as it had been stood for so long.
