It seems at very 'high speed', the oil pressure starts to drop off to below 28psi, and the warning light comes on (the car is always kept topped with oil, but has been consuming about 2L per 1000 miles), in normal traffic oil pressure is around 38-45psi. I'm not sure if it is something I should be really worried about?? Apart from that the car feels fine..

Having almost the same problem. At high speed the oil pressure light blinks sometimes. Difference with yours is that my oil pressure at the lcd stays at normal level (aproxx. 40 psi). So I decided not to worry about it. Because I have some vibrations at high speed I think that could be a cause.

Oil pressure may be a sender issue. 2l of oil every 1000 miles is high, I might put 1 litre in for every 3000 miles. It might be a problem or it could be the wrong grade oil has/is being used. If its too thin and the engine is of a reasonable milage it might be going straight out of the exhaust

what oil are you running and is the filling OK
is it low on oil and are you running on thin oil you have 1/2 the reason of low pressure
you should run at least 10w or 15 w synthetic oil
and
just to be sure
add some prolong
