Feels like it wants to die

Got a weird one...
Upgraded throttles...now running very nicely and has solved some outstanding issues like high rev miss and low throttle lumpiness. New pots too BTW. Maps all look noce. But one issue remains
Run on the Mway at normal speed for say 15-mins. All temps normal. Come off Mway, runs fine...come to a stop in traffic and smooth and idling nicely, 800-900 rpm
After a couple of mins crawling, temps have crept up a bit, not quite fans-on, but getting close. Waiting in traffic perhaps. Go to pull away, press gas pedal as normal, lift clutch and the engine feels like its going to die. De-clutch quick!, rev it a bit...revs jump up, re-bite the clutch, and it goes to die again. By now I'm rolling and it almost gets to the point where it feels like I'm about to re-start the engine with a rolling bump-start !
And then its fine ! Doesnt do it again. Even if temp rises lots.
So seems to relate to driving at speed, then crawling in traffic and seems to do this just once.
Ideas welcomed.

I had this happening to me twice over the last year.
The first time I was stopped behind traffic (with a relatively cold engine) and revving up to start, it did what you describe. The second time (engine warm this time..)I was giving way to traffic on a downhill slope road, slowly rolling and when I tried to start it did it again. Both times I stalled, started the car but it just died, and on the third attempt to start, revving very high, I managed to get going again.. And then it went back to normal.
No clue why it happened, so here is a +1 if anyone has any ideas...

Ditto. Dont know why and its been realy bugging me.

Had a decat chip fitted and it still isnt right but then it happened before the decat so.........
So, serviced again last month, drive to Germany and stalled at lights. On restat the revs oscillated from high to low to high for about 15 seconds.
Bit embarissing as here was a Porsche behind me.
I wondered wether it was due to the damp weather ?
