Can anyone advise on which, and how to fit, new side mirrors? I need to get some put on the side pillars and am not sure what ones to get or how best to fit them. I guess most are screwed from within the pillar but as the dash is in I am not sure if you can get away with drilling all the way through??

Depending on where about on the windscreen pillar you need to fit the arm will depend on whether you can just about access the inside of the pillar via the underside of the dash or whether you would need to take the dash out.
The main thing is that you should have the best possible vision the mirror can give.
Often it is necessary to trim the arm for the drivers side mirror as otherwise it sticks out to far.

My car has the steel triangular section across the top of the screen. At each end is a piece of tube into which the rod from the roll bar fits. I think it's something to do with the hood (if I had one). I've tapped each tube M10x1.5 and bolted on a two inch piece of slotted strip. To the other end I've bolted a small commercial mirror (£6.25 in my local shop). Not sure if the strip is stiff enough to resist vibration but it's just flexible enough to bend to adjust the mirrors.
