How do I not get scammed?

A bit of background. Recently let my Tuscan S Convertible go. The intension was to buy something sensible, I am finding it very hard to do this!! I do not want loads of money sitting on the drive, I want to drive the car. So now I am on the lookout but I do not want to go mad.
So, looking through PH ads. yesterday I came across a few seemingly good deals. There were the obvious scams, a 2007 Gallardo Spider and a 2003 360 Spider but, (I'm not THAT stupid!!) there are one or two others that could be real. Cars are left hookers and are abroad (europe, EU) and as a result, quite a bit cheaper. The left hooker thing does not bother me too much as I intend driving it in Italy quite a bit.
Question then. What do I do about getting the car checked for the obvious; theft, outstanding finance ownership etc. How would I pay? What questions should I be asking the seller?
One last thing, where do I find out about import tax, VAT etc.
Any help will be very much appreciated.
