Having travelled around France for some years now, I would strongly advise you to take ALL of your documents, but keep them somewhere safe.
Also, check with your insurers to ensure you are covered for more than third party/road risks.
Get yourself coverd fully comp (if you can afford it), and get a green card.
Hopefully you will not need it, but if you do it will save you hrs in the Gendarmery!

As I understand it, the green card system is used throughout europe, and is recognised by authorities as a universal comprehensive insurance which covers damage waiver, third party cover and more importantly that your vehicle carries insurance that covers you for European travel.
Hopefully you may never have to use it but in the event of an accident it will save you hours trying to deal with paperwork that at best, is unneccessary, but at worst could see you badly delayed by beaurocracy.
