Has anyone fitted an ajustable fuel pressure regulator to a 4.5 to see if it helps with the 2000rpm flatspot?

Adjustable fuel pressure regulator: it has one right setting and in infinite number of wrong ones. How is this an improvement?

I was thinking that my car may be running a bit lean now cos of the sports ex and de cat and wondering if anyone had used one?

The cure for rich/lean running...espcially around the 1000-2500 rpm range is down to the crap mapping on the factory ecu's. To improve upon this you'll need to go down the route of a remap setup such as the Emerald...Im sure that fuel pressure will have very little to do with your problem.

Right, even if you fix the 2000rpm flat spot, you'll ruin it everywhere else. Remapping will help, but the AJP is not the happiest engine below 3000rpm anyway.
