Where should this be in the oil system??

I have a few options:

After the oil has exited the engine (pre cooler)
After oil cooler
In the sump tank
or as it leaves sump to enter engine

I cant think where it should be? If its directly after the engine it will be at its hottest so you wont see how effecivly its cooling??

I'd say it needs to be near the oil pick-up in the sump. That way you're measuring the temperature of the oil which is entering the lubrication system and being asked to do the lubricating!

In the sump is the best place, most oils should be about 100°C in the sump to work best.

the other place is in the return line from the oil cooler post filter so just about to enter the engine should be about 70°C here

I would say.
For a road car, after the oil cooler.

But for your race car you have may have identified that you could benefit from more than one to see what is going on!

Before and after the oil cooler will tell you how well the cooler is working.
Do you need a bigger one? Do you need a thermostatic one? Do you need a smaller one?
In the sump will tell you how hot the oil is getting overall.
As it enters the engine to see it is still at optimum temp for the specific oil.

Sorry it's the Engineer in me!

Put one in the sump to monitor and see if you have a "problem" - if not then you can just keep monitoring - if you're notr happy with the results you see then you can start locating sensors all over the place!

Ultimately though, the critical thing is that the oil entering the lubrication system is at the right temperature.
