I'm in the process of draining the diff oil and resealing the end plate. Does anyone know what the torque settings are for the cover bolts.

Hex Head into steel you should be fine around these figures. Check the thread size.

M6 around 7lb/ft
M8 around 18lb/ft

It's only a cover and not structural so as long as it seals with the sealant and they don't come undone you'll be fine.

I did a search on google, without getting too technical (Dry fitting/lubed bla bla) for an 8mm bolt the nominal torque figure is 20 lb/ft (as you say)
