....you were close to agreeing to buy a 360 and had agreed that before you took it, it had a major service (inc belts) and that the cherished plate on the car was included.
The car then has its service, but its only a minor service (no belts) and when I ask, now suddenly the deal is that they will get the belts done but only if they keep the cherished plate.
No money has changed hands yet, so I may just walk away, plenty of 360's around to choose from.

to explain my comment further.
if a dealer makes a deal, then changes it, how do you know if they have the integrity to actually do what they say they've done?
now that the deal has hit a hitch, whatever you do (apart from what bromers suggests) will lead them to try and cut corners and claw some money back on the deal.
a badly set up 360 is a nightmare, but one that has been prepared properly is an excellent car.
i have a story of just such an occurence. two cars bought from the same dealer, one prepped by said dealer and one bought as a trade car and prepped properly elsewhere.
the first car had nothing but problems, with the dealer refusing to pay to fix them..despite them clearly being their fault.
(new brakes, tyres, exhaust to name but a few)
the owner of that car is unlikely to ever buy a ferrari again
the second has been flawless over 7k hard (and i mean hard) miles.
so how much do you trust the dealer after they change the deal?
