Help needed with Euro road trip and hire car

I am in the early stages of planning a European road trip with the Mrs and would appreciate some help from some of you with far more experience of this kind of thing than I.
The requirements are a good hoon through some mountain roads, a visit to Lake Como, a visit to Modena and Sant'agata (I wonder why?), somewhere like Florence and Pisa then a jaunt along the south coast of France.
My thinking is to fly to somewhere like Lyon, hire something interesting for the trip and then either leave it in Marseilles or return it to Lyon and fly home. I have a budget of about £700 for the car and 7 or 8 days for the trip.
First up, any recommendations for where to get a hire car from? I fancy something like a late 80s/early 90s air cooled 911, s2000/Boxter/Z4 or a hot hatch. I can find a few places in the UK to get a car from but am drawing a blank in France.
This is a very rough idea of the route. The route through the Alps is a stab in the dark and is where I require the most help. Is my route in any way achievable in 7-8 days whilst also feeling like a holiday and not a slog?

What about hiring the car in Italy?
May I give a couple of suggestions for the road:
1) what you highlighted is mainly motorway, quick but boring, so an alternative but nearby interesting road may be found in order to limit as much as possible the Mway miles.
2) you haven't given a potential break up of the trip (ie how long would you like to stop in one place) but I presume that being with your other half means it cannot be all driving, so, how important is the "visiting" part?
3) priod perio period! Some of those areas in summer are a real hell to drive due to tourists, could you explain more in detail when do you plan it?
Finally if it's in july/august I strongly advise you to avoid a ragtop, too hot and you either end up travelling withe the hood up or with sunburn!
