Will be in the Oxford area for a few days next month with a car obsessed 5 year old.
Is there anywhere within about an hour's drive that I can take him that'll be of interest? I guess the ideal thing would be if we could spectate at a track where he's likely to see supercars, etc

On the fringes of your time requirement, but the transport museum at Coventry is brilliant. Very easy to get to from Oxford.

Another one that's a bit further away, but worth seeing if there's anything on at Prescott Hill Climb (near Cheltenham). Can get right at the side of the track in places for spectating, lovely setting too.

Brooklands next door is much better.

Obviously none of these tick the box for moving supercars. For that you’d need a Trackday at a circuit.
