Question for the many more knowledgeable people out there. If you upgrade the intercooler on a turbo petrol car, will it run leaner than before or will the ecu compensate? I thought with modern ecus it would be the latter, but i've been told by a couple people it's actually the former. What's the truth? I know you need to remap to actually get the benefits from the upgrade but I assumed the ecu would be able to adjust to the cooler intake temperatures automatically.

No it won't.
In the map there will be a temperature compensation table, as the name implies it will adjust all the parameters of the engine dependent on intake temp.

There is no generic answer, and it will of course depend on the car, the ecu, how good or bad any intercooler was before...and how good or bad it is now.

Many things can change after such a swap.
