Sounds like a blown head gasket to me. Not actually spiking the temp gauge but the bubbling is possibly combustion gases getting into the cooling system. A cylinder leak-down test could confirm a head gasket issue for you.

Temp guage wont usually move from "normal" until around 100degC as its pretty crap as an actual guage.

It could be an air lock in the system, as they can be a bugger to bleed, but if it has happened out of the blue, and no recent work has been done. Then head gasket problems are likely.

Had a similar problem on the wifes MX5.Turned out to be a blocked radiator, rather than HGF as first thought,so worth checking that as well.
