Usually fuel or brakes, although power steering can use them as can oil systems (particularly on Porsches).
Basically it is a pretty simple way to join a pipe to a block of some sort be it a brake caliper/steering rack/pump/oil distributor etc. Also has the benefit of allowing the pipe to be positioned at any rotation meaning parts can be used on multiple cars.
